Curry Chickpea Salad Sandwich Recipe
Chickpeas, or garbanzo beans, are a staple in our house. They are a legume which means that they come from a plant that grows pods. (Yes, chickpeas grow in pods.) Legumes are a really important part of a vegan diet as they are high in protein. They also provide essential vitamins, minerals, and fiber.
I’m sure you have heard of “Chicken salad sandwiches” or “Egg salad sandwiches” before. However, if you're a vegan, you might find your "salad sandwiches" to be lacking. Well, you're in luck! Because we found a delicious chickpea salad recipe that can be made into a sandwich or eaten with other bases, such as crackers or naan.
The added curry in this recipe gives fills each bite with flavor and the dried cranberries lend a sweetness that combines well with the spiciness of the curry. We hope you enjoy! Let us know what you think about it!
ingredients:
½ C vegan mayonnaise
2 ½ tsp curry powder
¼ tsp salt
¼ tsp onion powder
¼ tsp garlic powder
Black pepper to taste
1 T lemon juice, fresh squeezed
1T maple syrup, or other liquid sweetener of choice
1-15 oz can chickpeas, drained and rinsed
½ C dried cranberries, or currants/raisins
1 carrot, peeled and shredded
⅓-½ yellow bell pepper, diced, or bell pepper of choice
instructions:
In a bowl whisk together the mayonnaise, curry powder, salt, onion powder, garlic powder, black pepper, maple syrup, and lemon juice.
Add the chickpeas, cranberries, carrot, and bell pepper. Combine thoroughly. (If you prefer a mixture that holds together better, smash the chickpeas before adding them in.
Put on toasted bread with lettuce or spinach or serve open-faced on crackers or naan.
Gluten-free? Wrap the chickpea mixture in a tortilla or enjoy it with quinoa or rice.
