No-Sugar Vegan Matcha Latte

I’m sure by now you’ve heard about the benefits of antioxidants. From blueberries and strawberries to kale and spinach, there are several sources you can get antioxidants from. One of my favorite ways to get those desired benefits of fighting oxidative stress from free radicals is from a delicious matcha latte.

Matcha is the powder of finely ground green tea leaves. This, in effect, provides a stronger dose of all the beloved health benefits of regular brewed green tea.

Now I’m not one to indulge too much with sweets, and when possible, I enjoy the flavor of things without many additives. So when it came to my bi-weekly matcha lattes, I needed to find a perfect recipe that still made it feel like a treat. This recipe is only three ingredients and is mostly made of water, but you can adjust accordingly to your personal preferences.

Feel free to add a little maple syrup if you desire a little sweetness, or do like me, and enjoy the earthy flavor of the matcha with a touch of coconut. Now, I’ve experimented a lot with different brands of coconut milk, and I mean A LOT! My favorite is Sprouts brand organic unsweetened coconut milk. Try different brands to see what you like!

I have also experimented with the best length of time to microwave the matcha latte. You’ll find my very specific number below! You can always boil water and add it, if you prefer. Do what feels best for you!

ingredients:

 
  • 3/8 C canned coconut milk

  • 1/2 tsp matcha powder, my favorite is Ujido

  • 1 1/2 C water

 
 

super-simple instructions:

  1. Pour coconut milk into microwaveable mug.

  2. Add matcha powder and whisk thoroughly. An electric milk frother would obviously work best.

  3. Add water and then microwave for one minute and 52 seconds. Whisk again and enjoy!
