No-Bake Vegan Coconut Macaroon Bars

When I think of coconut, I think of the Tropics. Sitting on the beach, soaking in the sun, and RELAXING. That’s my kind of day.

I also think about all the wonderful flavor coconut adds to various dishes from sweet to savory. Coconut ice cream, coconut cream pie, coconut curries; add it to soups, smoothies, oatmeal, and of course, cookies. 

When I think of cookies with coconut added in, I think of macaroons. These vegan coconut macaroon bars give you the flavor of coconut macaroons without the egg whites. These do not require any baking so they are super simple to assemble. There is a little almond flour to help hold the mixture together.

If you’ve been vegan for a while and upset that there’s no good macaroon option, you’re in luck! These coconut macaroon bars are delicious and I’ve worked hard to make sure they’re decently low in sugar. Enjoy!

 
 

ingredients:

Yields 16 square bars

 
  • 3 C unsweetened shredded coconut 

  • 6 T maple syrup 

  • 6 T coconut oil, melted 

  • 1 T almond flour 

  • 1 tsp vanilla extract 

  • Pinch or two of salt

 
 

instructions:

  1. Combine all ingredients in a food processor and process until well combined.

  2. Spread in an 8 X 8 inch pan. Chill in the refrigerator for one hour. 

  3. Cut into 16 bars.

  4. Enjoy!
